Che khuc bach - a Vietnamese take on the classic Italian dessert panna cotta, is a perfect dessert to cool Hanoi's hot summer.

The dessert includes buttery cubes of “cheese tofu,” preserved lychee, slivered almonds, and chia seeds. The cubes are the main part, and are made from cheese, milk, cream and gelatine powder to create a soft and chewy texture.

Unlike other desserts that are usually sweet, this dish has a milder taste. The dessert first made a storm in Ho Chi Minh City, and has slowly won the hearts of many people across the nation due to its refreshing taste.
